Opens with fresh fruitiness of olives that are still green, to which are added the moderate perceptions of aromatic herbs and abundant fruity fragrances, tomato leaf, sour apple and fresh floral aromas.
In the mouth it is clean and fluid, pleasant, with clear pungent sensations of chili in balance with the bitter notes of artichoke and arugola, softened by the calibrated sweetness.
In closing, retro-olfactory sensations that refer to dried fruit (almond) associated with a good spicy texture.
Recommended pairings: In the kitchen, the Avus is the perfect combination with raw on bread, salads, cuts of red meat and grilled gamey meat, stewed fish, soups and gamey meat.
This oil can be used as a cooking or finishing oil. This product makes a wonderful gift.
Packaging: 16.9 fl. oz. (500 ml) DOP glass bottle with matching DOP plastic top and integrated pourer for easy use.
Store in a cool, dark place.

    Versatile Oil!

    Avus is a heartier oil and super versatile. It has rich gold hue and looks beautiful when infused with alliums and herbs. This is my go to oil to use when making focaccia. The bread turns out super light and folks have told me time and time again, that my focaccia is otherworldly. They can't place the reason, they just know it's good. When a recipe is only flour, water, salt and know it's the olive oil that makes it special.

    The EXAU Avus and Lina are my go to olive oils while in the states! They are bold and delicious but also light enough to use on just about any dish. I also appreciate that the production is from a small town in untouched Calabria. When it comes to customer service, Skyler and Giuseppe were available to answer and assist with questions on the products, shipping, and even recipes to make a traditional meal. I highly recommend this oil and buying more than one at a time (so you never run out). ;)
